Bean and Vegetable Salad with Lime Dressing

 
A nutritious lunch time meal
 

Ingredients

 
  • Olive Oil 1/4 cup
  • Black Beans, Canned, rinsed and drained 2 each
  • Garlic, Clove minced 1 each
  • Salt 3/4 teaspoon(s)
  • Green Onions, Minced 4 each
  • Canned Yellow Corn, Sweet, Whole Kernals, 1 cup(s)
  • Cilantro, (optional) 1/3 cup(s)
  • Avocado, diced 1 each
  • Red Bell Pepper, medium, chopped 1 each
  • Tomatoes, chopped 2 teaspoons
  • Pepper 1 pinch/dash
  • Lime juice 3 1/2 tablespoon(s)
 

Directions

 
Kids: Place lime juice, olive oil, garlic, salt and pepper in a small jar.
Kids: Cover with a lid and shake until ingredients are mixed well.
Kids: In a salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, green onions and cilantro.
Together: Shake lime dressing and pour it over the salad. Stir salad to coat vegetables and beans with dressing and serve.
