This simple stew is the perfect choice for a midday meal. Get the hearty, warm meal you need without over stuffing yourself before dinner.
Ingredients
Lemon, Juice 1/2 each
Lentils, dried 2 cups
Onions, raw, chopped 1/2 cup
Garlic Cloves 2 each
Tomato, cut up 1 each
Nonfat Milk 2 cups
Curry Powder 1 teaspoon
Water 2 cups
Carrots, sliced 3 each
Vegetable bouillon 1/4 cup
Potatoes, cut into 1/2-inch pieces 5 each
Directions
Together: Wash the lentils.
Adults: Chop onion. Sauté the onion and garlic in the bouillon until the onions are lightly golden. Add the curry powder, water, and lentils.
Adults: Bring to a boil. Reduce heat and simmer for 15 to 20 minutes.
Adults: Cut potatoes into 1/2 inch pieces.
Adults: Add the potatoes, carrots, tomato and milk. Cover and continue cooking until the potatoes are tender when pierced.
Adults: Remove from heat and add the lemon juice and serve.
