Carob-Coconut Cookies
Simple and delicious cookies that children can help make. Yields 12-15 cookies
Ingredients
- 1 cup almond flour
- 1 cup unsweetened coconut flakes
- 1/2 cup carob powder
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 eggs
- 8 tablespoons butter or vegan butter substitute (melted) + 2 tablespoons for greasing baking sheets
- 1/2 cup honey
- 1 teaspoon vanilla extract
Directions
Adults: Preset oven temperature to 350°.
Adults: Melt 8 tablespoons butter and let cool
Together: When cooled off, pour the melted butter into the mix
Kids: Add honey and vanilla extract. Mix all ingredients
Kids: Add almond flour, coconut flakes, carob powder, cinnamon, baking powder, salt into a big bowl and mix. Add 2 eggs to mix
Adults: Bake for 10 minutes.
Together: Prepare 2 baking sheets by spreading 1 tablespoon of butter onto each baking sheet. Scoop spoonfuls of batter and place them on the baking sheets. Spread the cookies out evenly.
