Spinach Salad with Oranges, Walnuts, Cranberries & Apricots
A nutritious lunch filled with lots of vegetables and fruits
Ingredients
1 bag (10 ounces) baby spinach
2 oranges, peeled, and chopped
Grape tomatoes 1 pint
Chopped walnuts 1/3 cup
Dried cranberries 1/3 cup
Chopped dried apricots 1/3 cup
Crumbled feta cheese 1/2 cup
Red wine & olive oil vinaigrette
Directions
Kids:
Wash and dry baby spinach and set aside in a large bowl.
Add oranges, tomatoes, walnuts, cranberries, and apricots.
Toss with vinaigrette. Sprinkle tossed salad with feta cheese.
