Roasted Pesto Potato Salad

Delicious potato recipe for kids and families


  • Olive Oil 1 teaspoon(s)
  • Pesto sauce, store-bought 4 ounces
  • Red Potatoes, medium 3 pounds
  • Parmesan cheese optional


Adults: Heat oven to 425 degrees
Adults: Leave skin on potatoes and cut into chunks.
Kids: Place potatoes in large bowl and drizzle with olive oil; toss to coat.
Kids: Arrange potatoes in single layer on nonstick baking sheet.
Adults: Roast, turning once about halfway through, 30 minutes, or until golden brown and tender.
Together: Cover and refrigerate until ready to serve.
Kids: Just before serving, toss thoroughly with pesto sauce.
Kids: Optional: sprinkle with Parmesan cheese.
