National Dairy Council (NDC) presents a Foodies’ Night In  #FNIchat twitter chat with culinary group Cooking with Caitlin, featuring the #BeyondLI hashtag. The chat will cover tips and tricks for LI-friendly eating, cooking, and meal-planning, including:
-          Menu-planning techniques for entertaining those with lactose intolerance
-          Clever lactose-intolerant friendly spins on to include dairy in classic comfort food favorites
-          Simple solutions for making on-the-go lactose-intolerance friendly meals and snacks

I know there are many parents who have children who are lactose intolerant and are concerned that their child gets enough vitamin D and calcium rich foods.  My son has this condition and we are careful about the meals we make but of course, we want it to be nutrient rich (especially finding foods that have both nutrients).  But there are some things that I did not realize that really helped us with food preparation.  For example, I did not realize how hard cheese has very little lactose in it.  So your child may be able to eat some dairy foods that provide the nutrients but very little lactose.  The key is to have good factual information.

Here is a good infographic with facts about lactose intolerance.
