This Sunday is Mother's Day. I want to take a moment to thank my mother for everything that she has done for me and continues to do for me every day.
But I want to especially thank my mom this year for teaching me to try new foods. Growing up, I ate so many foods that many of my friends never heard of. I was lucky that my mom taught me to try all foods and enjoy the natural, healthy taste and nutrition that each food brings.
I grew up with quinoa before it was the rave. This was a regular cereal for us in the morning.
I enjoyed fruit smoothies well before there was a Jamba Juice made of papaya, mangos, cactus fruit and many berries. No sugar, just fresh fruit and water.
Avocados was always a part of our salad and we had a spaghetti sauce made of nuts!
My mom always cooked at home our meals and from scratch. She was a single mom and a full time worker with a second job on the weekend. But nutrition is a very important part of the Peruvian culture and we were taught to eat fresh, cook daily and appreciate food.
Thank you Mother for instilling this value in me throughout my lifetime.
