How to cook artichokes

Did I mentioned how much I love artichokes?  

Here is the recommended way to cook it:*

  • Pull off lower petals and cut off the stem.
  • Place into boiling, salted water.
  • Let simmer 25 to 40 minutes until petals near center pulls out easily. Invert to drain.



  • Place on rack over 1½ inches boiling water.
  • Cover and cook 25 to 40 minutes.


(I am not big on microwaving vegetables - I much prefer to cook it on the stove, but for those of you that prefer it, I am including it)

  • Place in a glass bowl upside down
  • Cover with a glass top
  • Cook on high 6 to 7 minutes.
  • Test for doneness by piercing the bottom of the artichoke with a toothpick. It should feel like a baked potato. If you feel a hard spot, cook for another minutes and test again.
  • Let stand covered 5 minutes after cooking.
